Organic French Whisky
The farm/distillery of the Hautes Glaces opened its doors in 2009. Although the company is quite young, its production site is very old. The brand's two founding fathers, Frédéric Revol et Jérémy Bricka, chose a former priory from the 17th century to house their bottles and equipment. The building is located at the very top of the Col de Cornillon, at 900 meters of altitude, on a little commune called Saint-Jean-d'Hérans (in the French Alps). In the past, the region used to be a dangerous place, due to strong disagreements between Christians and Huguenots.
Jérémy and his high school friend Frédéric now inhabit the priory, producing their fully organic French whisky. The duo released its very first cuvée in 2012. They want to produce a spirits full of cereals that can truly let the local terroir shine through, as a gut reaction to many highly industrialized whiskies. In 2017, the distillery was bought by the world famous spirits group Rémy Cointreau.
Thankfully, the two original founders remain at the helm of the Hautes Glaces. In order to produce bigger quantities without impacting the whisky's quality, Frédéric and Jérémy had a second site built, as soon as 2021. The new distillery sits next to the old priory. They managed to retain the original DNA of their mountain whisky. Today, the Domaine des Hautes Glaces can produce up to 70,000 hectoliters of whisky each year. All the cereals used during the distillation process come from a small supply chain, 100% local and organic, with more than a dozen members.
