Islay Scotch Whisky
Located on the coast of Port Askaig, Caol Ila (pronounced "Cull-eela") towers overs the Islay Strait. Founded in 1846 by Hector Henderson, Caol Ila was at first a small whisky distillery, selling its products to the local population. It was then bought by Norman Buchanan, the owner of the neighboring Jura Isle’s distillery, in 1854. Later on, in 1927, the Distillers Company Limited Group (the future Diageo Group) bought the distillery and decided to raise the production. Thus started a 50 years plan to reach 6 alembics of 20,000 liters for the wash stills (the step after the fermentation process) and 6 alembics of 12,000 liters for the spirits stills (the step right after).
The yearly total production of Caol Ila in 1970 was 6,25 millions of liters of whisky. That is to say the largest quantity of spirits on the entire Islay Island. Most of what the distillery produced was used as a blend for the famous Johnnie Walker whisky brand, although Caol Ila’s single malt whiskies were renowned for their own style, full of iodine, reminiscent of seashells and olive oil.
