Arbois-Pupillin 2010 - Pierre Overnoy
Pierre Overnoy is seen as a precursor in the little world of wine. Son of a winegrower, he saw the arrival on the market of the very first herbicides, during the 50's, and immediately knew that it would be damaging to the environment. Thus, he decided that he would never use them.
Once he inherited the family domain in 1968, he took an interest in biology and chemistry. His goal was to develop a more organic method of winemaking. In 1984, for example, he decided to stop using sulfites to control the fermentation process.
Pierre Overnoy was childless but he found an heir in Emmanuel Houillon. He taught the young man everything he knew for 15 years and offered him the domaine in 2001. We can say that Emmanuel managed to get to his master's level, because his vintages seem to be a direct continuation of Pierre's work.
