- Presentation of the winery
Billecart-Salmon house was founded in 1818, from the union of Nicolas-François Billecart and Elisabeth Salmon. This house has flourished throughout the nineteenth century, in particular, and like many others, thanks to the Russian market.
Currently, François and Anthony Roland-Billecart, from the 7th generation, manage the winery, with the help of François Domi (cellar master for more that 30 years now) and Denis Blée, Director of the vineyard and head of the winery.

The Billecart-Salmon House owns 15 hectares of vineyards (including 7 in Damery, in the Valley of the Marne, 4 Côte des Blancs, in Chouilly, Avize and Le Mesnil-sur-Oger, and four still in Ay and Mareuil-on Ay). 50 hectares are leased in the region, and the equivalent of 100 additional hectares of vines are sourced elsewhere.
A new state-of-the-art winery was built in 2001 in Mareuil-sur-Ay. Billecart-Salmon House has preserved ancestral winemaking methods passed from generation to generation, while perfecting them. The philosophy of the house is inspired by this principle "Give priority to quality, strive for excellence."

All the champagnes produced by this famous house are high quality, but the prestige cuvées are pure models of complexity and class.
The non-vintage Brut Reserve, generally from 40% Pinot Meunier, 30% Chardonnay and 30% Pinot Noir, presents nice balance and freshness.
Brut Blanc de Blancs, produced for the first time in 1997, has the same balance and freshness characteristics, but is produced exclusively from great growths.
Brut Sous Bois was born after experimenting fermentation in barrels from 1995. Made of Chardonnay, Pinot Meunier and Pinot Noir, the champagne demonstrates the elegance and finesse of Billecart -Salmon.
The prestige cuvee of Billecart-Salmon house is the Cuvée Nicolas François Billecart - usually produced from 60% Pinot Noir and 40% Chardonnay. "Female" prestige cuvee is the Cuvée Elisabeth Salmon, a prestige rosé wine, produced from the same grape varieties in equal proportions.
Brut Rosé is undoubtedly the most famous and recognized Champagne from the house Billecart-Salmon, made from Chardonnay, Pinot Meunier and Pinot Black.
The result of a blend of Chardonnay (40%), Pinot Meunier (30%) and Pinot Black (30%) vinified in red, this champagne has a pale and delicate pink dress, as a result of a fine balance between grape varieties used in its composition. François Domi also uses a blend of different years, to stabilize the color of this champagne (the base is from the 2011 harvest, and contains 40% reserve wine).
Red fruit and citrus zest on the nose, fresh and elegant in the mouth.
