Fine Burgundy Wines

 

The Chavy-Chouet estate emerged from the union of two distinguished families in Meursault and Puligny-Montrachet. In 2006, Romaric Chavy, then just twenty years old, took the helm of the estate, succeeding his father, Hubert Chavy. He received training from the best, including François Mikulski, one of Meursault's greatest winemakers. Committed to a delicate balance between rigor, tradition, and innovation, Romaric promptly decided to cultivate his 15 hectares of vineyards using sustainable practices. The family plots he works on span from Pommard to Saint-Aubin, encompassing prestigious names such as Les Champs-Gain and Les Folatières.

The talented young winemaker, a proud representative of the seventh generation, seeks purity, elegance, and minerality in his white wines, while the reds he produces emphasize structure, finesse, and fruity notes. The estate has stopped using herbicides 30 years ago, instead opting for manual plowing and employing treatments with sulfur and copper. The vine stocks are around 65 years old, naturally leading the estate to go with more limited yields. Consequently, the grapes produced are healthier, resulting in more balanced wines. The winemaking process, from pressing to aging in oak barrels, is also carried out with minimal intervention in the cellar.
