Organic wine from Pommard
Fanny Sabre is a young winemaker from the Côte de Beaune region in Burgundy. She is the daughter of Dominique Lafon, a renowned winemaker and owner of the famous Domaine des Comtes Lafon. Fanny began working in the vineyards at the age of 18, working for her father and other wine estates in the region, which means that she actually grew up in the wine world and acquired solid experience at a very young age, notably with Philippe Pacalet (who helped her early in her new career).
In 2005, when she was only 25 years old, she decided to embark on her own adventure by taking over the family estate in Pommard, to create her own version of it: the Domaine Fanny Sabre. She later purchased vineyards in several prestigious appellations in the region, such as Beaune, Pommard, Volnay, Meursault, and Puligny-Montrachet, for a total of 4 hectares. From the start, she knew she would only work in biodynamics.
Fanny practices natural viticulture, using only environmentally friendly methods such as cover cropping, yield control, and banning the use of pesticides and other chemical fertilizers. The grapes are harvested by hand at the estate, with meticulous sorting, and the winemaking is done traditionally, with natural fermentation and no added yeast whatsoever.
The organic wines produced by Fanny Sabre are said to be elegant and refined, with a great aromatic purity and beautiful aging potential. Fanny was also quickly recognized by her peers for her hard work and was even named "Winemaker of the Year" in 2017 by the RVF (the Revue du Vin de France), a prestigious distinction in the French wine world.
