The six pillars of whisky

Built in 1700, the Macallan Estate covers 157 hectares in Speyside and dominates the landscape with its imposing sandstone building. It is on the land steeped in history of this Highlands manor that Alexandre Reif founded the Macallan distillery in 1824. Today the manor is no longer the place of exploitation, but remains the spiritual heart of the house. With its wide range of single malt whiskies, the distillery is positioned at the top of the range and has established itself as a model of its kind. Macallan is equipped with fifteen unique stills, as they are the smallest in Speyside and their shape has been studied to maximize the contact between alcohol and copper. These "curious little stills" allow the concentration of a fruity, rich and full-bodied distillate that is typical of Macallan single malts.

Another essential pillar of a Macallan whisky: the barrels. Made according to specifications established by the distillery, the oak barrels soaked in sherry or bourbon are largely the final aromas of the single malts produced. The distillery also claims to be the one that spends the most in the design, manufacture and impregnation of its spirits-aging barrels.

All Macallan whiskeys bottled by the distillery have natural colors. Only the interaction between the distillate coming from the alembic and the oak of the maturing casks can provide the rich natural diversity of colors across the whole range, from light oak to the darkest mahogany. These natural colors stay "fixed", unlike artificial colors which fade relatively quickly when exposed to sunlight. The cellar master must show incredible know-how to obtain a uniform natural color, bottling after bottling.

Finally, the Macallan spirit. Before establishing itself internationally, Macallan had already become a reference in the United Kingdom. The Craigellachie distillery is aimed at an audience of enthusiasts, which is why it only sells 16% of its production and keeps everything else. The stocks thus preserved will eventually offer some exceptional whiskeys, highly prized by collectors.
