Burgundy, Côte de Nuits, Chambolle-Musigny, Premier Cru, Les Amoureuses, 2007 Vintage, Domaine Amiot Servelle
Tasting notes for the Chambolle-Musigny 1er Cru "Les Amoureuses" 2007 - Amiot-Servelle
- EYE: Let us observe with admiration this robe of deep ruby red, crystal-clear, and luminous, characteristic of the great crus of Chambolle-Musigny. Its brilliance suggests preserved youthfulness despite the years.
- NOSE: The first wafts reveal a complex bouquet, elegantly blending aromas of juicy and delicate red fruits, such as cherry and raspberry, with more subtle notes of violet and undergrowth. An olfactory invitation to exploration.
- MOUTH: This Burgundy premier cru reveals itself with finesse. The delicate attack gradually gives way to an elegant structure characterized by silky tannins. The flavors of red fruits persist on the palate, balanced by a slight minerality and a hint of spices in the finish.
In short: The Chambolle-Musigny 1er Cru "Les Amoureuses" 2007 from the Domaine Amiot-Servelle demonstrates undeniable aging potential. It is recommended to cellar it for another 5 to 10 years to reach its peak, allowing the wine to fully develop its complexity. Pair this premier cru with a grilled ribeye to highlight its tannic structure or with duck confit if you prefer to enhance its red fruit notes.

Organic wine estate from Chambolle-Musigny
In 1920, Clément Tachot planted a few grapevines on the commune of Chambolle-Musigny, in the Burgundy region, and began making his own wine. The unassuming estate didn't have an official name back then. Later on, his daughter Cécile Tachot inherited the vineyard, which she started exploiting as well, with the help of her husband Jean Servelle. Together, they founded the Domaine Servelle-Tachot, in the 1950's.
After a few years, Élisabeth Servelle, the daughter of Cécile and Jean, came to help her parents take care of the family business, with her husband Christian Amiot (son of famous Morey-Saint-Denis winemaker, Pierre Amiot), in 1980. When Jean died, Élisabeth and Christian became the new owners of the Domaine Servelle-Tachot, which they naturally renamed "Amiot-Servelle". Their three children, Violette, Prune and Antoine, all supported their parents in the estate at some point. Prune and Antoine have even become the new managers of the 8 hectares estate, in 2011. They work on some prestigious wine appellations, such as the Amoureuses Grand Cru and the Clos Saint-Denis.
The Domaine Amiot-Servelle has been 100% organic since 2003. They received an official certification in 2008. Such a transition was quite natural for the owners, as Christian's philosophy was already very close to many current organic agriculture methods (sustainable agriculture, no more chemical pesticides…) This Côte de Nuits wine estate is actually one of the very few organic estates you'll find in Chambolle-Musigny.
