Côte des Blancs Champagne
The champagne house Dhondt-Grellet is a family-run business located in Flavigny, a small village not far from Avize, on the famous Côte des Blancs (Champagne region). The family's history dates back to the beginning of the 17th century, when their ancestors settled in the region and immediately began cultivating vineyards. Over the centuries, the Dhondt family specialized in the cultivation of Chardonnay, a white grape variety that is one of the three officially authorized grape varieties for the production of champagne wine.
In 1986, Éric Dhondt and his wife Edith Grellet founded the Maison Dhondt-Grellet. They then decided to focus on producing high-quality wines by limiting yields per hectare and working in an environmentally friendly manner. Their son, Adrien Dhondt, began helping his parents at the estate in 2001. Éric and his wife later decided to switch to organic farming, then to biodynamic farming (without any certification, though) in 2004, with natural preparations for soils and plants. Thanks to these practices, the quality of the grapes improved, allowing them to produce finer and more complex champagnes. In 2012, Adrien took over the champagne house, at the age of 22.
Today, Maison Dhondt-Grellet produces several champagne cuvées, all made from grapes grown on their own vineyard. The champagnes are vinified on a plot-by-plot basis, like Burgundy wines, and aged in a cellar built in the 1960's. They are made using traditional methods, with bottle fermentation, lees aging, and extended maturation. Dhondt-Grellet champagnes are considered among the best in the Côte des Blancs, highly appreciated by wine connoisseurs around the world. The house is regularly recognized for the quality of its cuvées and its commitment to the environment.
