A know-how transmitted from generation to generation
The Domaine Pavelot is located in Savigny-les-Beaune (Côte de Beaune, Burgundy). It is a family estate, transmitted from generation to generation and run by Jean-Marc Pavelot and his son Hugues . This transmission makes it possible to preserve and develop their precious know-how. The philosophy of the estate is to produce ripe, high quality grapes that will make an exceptional wine.
The estate extends over 13 hectares (mainly in Savigny-lès-Beaune, with plots also in Beaune and Aloxe-Corton) and the exploitation is intended to be reasoned with an impact on the quality of the harvest and also on the condition health of the vines. Some plots of the estate reach a respectable age of 80 years, such as Gravains and Dominode.
The protection of the vineyard is part of a sustainable control program. Controlling yields, essential for quality, is obtained by restrictive pruning, targeted and limited organic fertilization, serious disbudding, and, if necessary, green harvesting. The harvest is done manually at optimal maturity, with a first sorting carried out in the vineyard.
The wines are aged in oak barrels for 12 to 14 months for the village appellations and 14 to 16 months for the first growths, before being bottled. The estate produces wines that reflect the typicity of their terroirs, combining tradition and expertise to offer high quality products.
