Tasting notes for the Pommard 2020 - Philippe Pacalet

  • EYE: This Pommard displays a robe of remarkable depth, oscillating between intense ruby and deep garnet. Its hue eloquently reflects the vibrant youth of the vintage. The crystal-clear clarity of the color, along with delicate legs, hints at a tasting that we won't forget.
  • NOSE: A captivating aromatic bouquet unfolds. Aromas of red fruits, predominantly cherry and raspberry, intertwine with subtle notes of licorice and damp earth. Barrel aging delicately expresses itself with accents of vanilla and cedar, adding a balanced woody dimension. The overall complexity reveals the distinctive personality of this red wine.
  • MOUTH: On the palate, this 2020 vintage distinguishes itself with a nice balance. Tannins, both present and elegant, impart a solid structure while maintaining a pleasant finesse. Lively acidity brings a welcome freshness, accentuating the vibrancy of flavors. The palate, dominated by red fruits and spices, evolves with elegance towards a persistent finish, promising positive evolution over the years.

In short: The Pommard 2020 from Philippe Pacalet embodies the vibrancy of youth while offering an aging potential of 8 to 12 years. To accompany this structured wine, consider pairings with roasted duck breast, wild mushroom risotto, or a plate of aged cheeses. Famous Beaune winemaker

Philippe Pacalet is from a family established in the Burgundian vineyard. He began his professional activity with his uncle, Marcel Lapierre, precursor in research and defense of natural wines without sulfur. As oenologist at Domaine Prieuré in Côte d'Or, until 2001, he began to implement his non-interventionist approach, aiming for a respect for nature and winemaking methods without sulfur or industrial yeasts. He is still using those methods, since his installation in Beaune.

Philippe Pacalet rents for his activity 8 hectares on the Côte de Beaune, of carefully selected vines, and produces wines from more than 20 appellations. Manual harvesting, selecting only mature grapes, allow him to produce very fine wines of great aromatic purity and precision. The wines from this producer are also widely known for their sweetness and complexity, as well as their consistency between nose/mouth.
