Natural wine made in Burgundy
The Domaine de Chassorney is a small family-owned wine estate located in Saint-Aubin, in the Côte de Beaune region of Burgundy. It was founded in 1996 by Frédéric Cossard, a young winemaker, whose dad was a local farmer and who had previously worked in several vineyards in the Côte de Nuits and Côte de Beaune. Later, a wine trading house was also established in 2006, which buys grapes from Burgundy, but also from the Jura and Languedoc regions. The Domaine de Chassorney produces organic and biodynamic wines, with a production limited to about 10,000 bottles per year.
The Chassorney vineyard covers an area of just under 3 hectares, spread across several superb appellations, including Puligny-Montrachet, Meursault, Nuits-Saint-Georges, Volnay, Saint-Aubin, and Auxey-Duresses. The grapevines are cultivated 100% biodynamically, using environmentally friendly agricultural practices such as cover cropping, composting, and the use of organic preparations. The planting is parcel-based, and the harvest is done entirely by hand, with a meticulous sorting process to select only the best grapes.
The vinification is done traditionally, with natural fermentation, no addition of exogenous yeasts, and aging in oak barrels for about 12 to 15 months. Frédéric Cossard aims to give back to the terroir what it is owed, which explains the winemaker's demanding work ethic and the huge amount of time he spends taking care of his vineyard.
