- NOSE: Fresh red fruit aromas, such as cherry and raspberry, harmoniously blend with delicate floral notes of violet and rose. Subtle and elegant hints of black pepper and cinnamon add a touch of spice. Discreet woody notes of vanilla and cedar complete the ensemble.

Rising star from the Côte de Beaune
David Trousselle is part of the new generation of rising stars in Burgundy. He settled in Baubigny in 2014, on the famous Côte de Beaune, only 8 km away from Chassagne-Montrachet. When he was only 28 years old, this native of the region dreamt of becoming a viticultor. Which is why he studied hard in Burgundy and Bordeaux and once he came back home, he took ownership of the family wine estate. David Trousselle is motivated by his love for the job of winemaker, and he actually has only one simple goal in mind: to do better, every time. This is a promise he'll always honor.
On his 5 hectares of vineyard, where Chardonnay usually grows, David decided to plant Pinot Noir grapevines as well. In his estate, he uses techniques that are respectful of the vineyard and its surrounding environment. The harvest is entirely done by hand, almost nothing gets added to his wines, the aging process is done in oak barrels and can take up to a full year… In 2021, David Trousselle asked for the official AB (organic agriculture) certification, to cement his position as a defender of nature. The wines he produces are a bit more acidic than the norm, but they also have a nice minerality and impressive smoothness.
