Tasting notes for the Clos de Vougeot Grand Cru 2019 - Philippe Pacalet
- EYE: When the gaze falls upon this Clos de Vougeot, it is immediately drawn to its captivating deep red hue. A dense and concentrated ruby tint that speaks to the quality of this Burgundian grand cru. The impeccable clarity of the liquid in the glass reveals meticulous winemaking, with delicate purple reflections on the periphery suggesting a vibrant youthfulness.
- NOSE: Upon olfactory analysis, this wine unfolds quite the rich and complex bouquet. Dominant aromas of black cherry and blackberry, among other red and black fruits, mingle with subtle notes of spices and flowers. Integrated scents of vanilla and wood from aging add an extra dimension. Undertones of undergrowth and leather complete this depth-rich aromatic palette.
- MOUTH: During the tasting, the grand cru impresses with the harmony of its flavors. Its tannins, both robust and delicate, provide a solid foundation, while a lively acidity ensures a well-measured freshness. The diversity of flavors, from concentrated red fruits to subtle hints of cocoa and pepper, creates a memorable gustatory experience. The persistent finish elegantly underscores the finesse and mastery of the inherent power of this vintage.
In short: Philippe Pacalet's Clos de Vougeot Grand Cru 2019 has an estimated aging potential of 12 to 18 years. To accompany this exceptional wine, we suggest pairings such as grilled pork chops with rosemary, roasted veal with wild mushrooms, or truffle risotto. Its blend of power and elegance makes it an indispensable choice for connoisseurs seeking red wines that are both complex and solidly structured.

Famous Beaune winemaker
Philippe Pacalet is from a family established in the Burgundian vineyard. He began his professional activity with his uncle, Marcel Lapierre, precursor in research and defense of natural wines without sulfur. As oenologist at Domaine Prieuré in Côte d'Or, until 2001, he began to implement his non-interventionist approach, aiming for a respect for nature and winemaking methods without sulfur or industrial yeasts. He is still using those methods, since his installation in Beaune.
Philippe Pacalet rents for his activity 8 hectares on the Côte de Beaune, of carefully selected vines, and produces wines from more than 20 appellations. Manual harvesting, selecting only mature grapes, allow him to produce very fine wines of great aromatic purity and precision. The wines from this producer are also widely known for their sweetness and complexity, as well as their consistency between nose/mouth.
