Tasting notes for the Chambertin Grand Cru 2007 - Domaine Bouchard
- EYE: The wine has a deep and intense red color, with purple reflections. Its color is bright and gives a sense of liveliness. The clarity is perfect, indicating the quality of this wine. A slight viscosity can also be observed when swirling the wine in the glass.
- NOSE: It is complex and expressive. Intense aromas of red and black fruits, such as black cherry, raspberry, and blackberry, blend with spicy notes of pepper, licorice, and cloves. Subtle nuances of undergrowth, leather, and tobacco add an additional dimension to this aromatic bouquet. Hints of vanilla and woody notes from the oak aging process can also be detected.
- MOUTH: This Chambertin reveals itself to be powerful and elegant at the same time. The flavors of black fruits are present, with a beautiful concentration and great intensity. The tannic structure is firm yet silky, providing a velvety texture. Balanced acidity refreshes the palate, while notes of licorice, undergrowth, and spices unfold with subtlety. The finish is long, persistent, and leaves an impression of depth and complexity.
In short: The Chambertin Grand Cru 2007 from the Domaine Bouchard Père & Fils is a wine of great elegance and remarkable aromatic complexity. Its rich nose and balanced palate make it an ideal choice for Burgundy wine enthusiasts. It pairs perfectly with refined dishes such as grilled red meats, feathered game, aged cheeses, and truffle-based dishes. In terms of aging, this bottle can easily be kept for 10 to 20 years under proper conditions, allowing its aromas to further develop and its tannins to harmonize. It is a wine that will gain complexity and elegance over time.

Iconic Burgundian wine estate
Bouchard Père & Fils was founded in 1731 by Michel Bouchard in Beaune. More than 9 generations have worked in this exceptional Burgundy estate, consolidated for over 280 years. The creation of the family business began in 1775 when Joseph Bouchard acquired the first vines in Volnay. His son, Joseph Antoine Philibert Bouchard, took the opportunity to expand the field by buying several plots in Beaune after the French Revolution, when Clergy and nobility properties were being sold.
The successive acquisitions, throughout the 19th and 20th centuries, lead to the current estate, the largest in Côte d'Or, with 130 hectares of vineyards, 12 of which classified as Grand Cru and 74 as Premier Cru. Biodynamics reign supreme over the 450 plots of the estate, crops are harvested by hand, and the vine carefully sorted before vatting. The process is long, and done in the best conditions, in underground cellars in the estate.
