Description

This estate reflects the story of a young winemaker, Thomas Pico, who grew up in the small Chablis village of Courgis. Son and grandson of winegrowers, Thomas inherited love and passion for the profession. He focused his studies on oenology and viticulture and in 2004 he took over 8 hectares of the family estate of Bois d'Yser.

Respectful of the environment and concerned about the health of his loved ones, he naturally converted his 8 hectares into organic farming. In 2009 he received Ecocert certification. Continuing to respect the terroir, he does not use harvesting machines, he works his plots entirely and he limits yields in order to guarantee a quality wine. He also practices vinification with native yeasts.

The estate gradually expanded and Thomas also took charge of the management of the family estate (the Bois d'Yser estate).
