Philippe Pacalet
Famous Beaune winemaker
Philippe Pacalet is from a family established in the Burgundian vineyard. He began his professional activity with his uncle, Marcel Lapierre, precursor in research and defense of natural wines without sulfur. As oenologist at Domaine Prieuré in Côte d'Or, until 2001, he began to implement his non-interventionist approach, aiming for a respect for nature and winemaking methods without sulfur or industrial yeasts. He is still using those methods, since his installation in Beaune.
Philippe Pacalet rents for his activity 8 hectares on the Côte de Beaune, of carefully selected vines, and produces wines from more than 20 appellations. Manual harvesting, selecting only mature grapes, allow him to produce very fine wines of great aromatic purity and precision. The wines from this producer are also widely known for their sweetness and complexity, as well as their consistency between nose/mouth.
