The purest expression of Chablis
Athénaïs de Béru has quite an interesting story. Former investment banker in Paris, she decided to leave everything behind and went back to her home in the Chablis region. Why? To become a winemaker! With the help of her mother, the young woman resurrected the family estate her father had to abandon. A real obstacle course began for Athénaïs, who had to learn a completely new trade and many winemaking techniques.
Firmly determined to overcome any hurdle thrown at her, and willing to make this 400 year-old estate shine once more, she went back to school and internships all over Burgundy to hone her skills. A few years later, after having met a lot of people who inspired her, she discovered the benefits of organic winemaking. No more herbicides, no more pesticides, no more fertilizers. It's time for biodynamics (Demeter certified since 2010).
Human intervention is almost completely forbidden in the estate. Athénaïs de Béru adds very little sulfites to her cuvées, she only uses indigenous yeast and refuses to tamper with her wine's integrity. At the estate, picking grapes is done by hand, in order to not disturb the 15 hectares of vineyard from the Château de Béru. Here, the end goal is very clear: to let the wines truly express themselves.
