Caviar appeared in France during the 15th century. At the time, it was called "cavyaire", a word derived from the Turkish word "khawyar". Nicknamed "black gold", these eggs come from sturgeons, an extremey ancient fish, which lived at the same time as the dinosaurs. The most famous species of sturgeons is the Huso Huso, also known as European Beluga. A fish that can grow up to 8 meters long.
