Caviar appeared in France during the 15th century. At the time, it was called "cavyaire", a word derived from the Turkish word "khawyar". But caviar is much older than that: it is actually considered to be one of the most prestigious types of food since the Antiquity. Byzantine nobles were already enjoying it during the 9th century, according to written texts. Nicknamed "black gold", these eggs come from sturgeons, an extremey ancient fish, which lived at the same time as the dinosaurs. The most famous species of sturgeons is the Huso Huso, also known as European Beluga. A fish that can grow up to 8 meters long.
