This AOC is one of the best wine appellations in Burgundy. The Pouilly-Fuissé vineyard represents 760 hectares of steep slopes surrounding four villages: Solutré, Vergisson, Chaintré and of course Fuissé. The soils, mainly clay, limestone and sometimes shale, are fully exposed to sunlight. The grapevines are scattered at different altitudes, between 250 and 350 meters.
The terroir can produce 42,000 hectoliters of white wines (Chardonnay only), which are all very diverse thanks to the varied richness of the soil. The harvest is actually a bit peculiar: on the northern slopes of Vergisson, it happens two weeks after the one in Chaintré (south). The latter batch of grapes is juicier, whereas the Vergisson one tends to be more mineral and dynamic.
